Mexican Cake

This cake was consumed on the Riveria Maya in Mexico.

It consisted of a very soft pastry base with a vanilla flavoured custardy /creamy interior.It was then topped with the common Mexican sweet jelly like coating to finish it.

Truly divine. Consumed on several occasions. Note that it was very humid at the time as the raspberry ripple ice cream is a bit melty.

Mmmmmmm. Melty.
